Horseradish-Encrusted Beef Tenderloin

Nothing says “Christmas dinner” quite like a big, juicy roast. This recipe for horseradish-encrusted beef tenderloin is the perfect choice for any celebration.

Ingredients:

-1 beef tenderloin

-1 tbsp horseradish

-1 tbsp olive oil

-1/2 tsp salt

-1/4 tsp black pepper

-1/4 cup flour

-1 cup milk

-1 egg

-1 1/2 cups breadcrumbs

 Instructions: 

  1. Preheat oven to 425 degrees F (220 degrees C). 
  2. Pat beef tenderloin dry with paper towels. 
  3. Mix horseradish, olive oil, salt, and black pepper in a small bowl. 
  4. Spread mixture over beef tenderloin. 
  5. Place on a baking sheet. Bake for 30 minutes or until a thermometer inserted into the center of the beef tenderloin reads 145 degrees F (63 degrees C). 
  6. Combine flour and milk in a shallow dish—dip beef tenderloin into the flour mixture, then the milk mixture. 
  7. Place bread crumbs in another shallow dish—coat beef tenderloin with bread crumbs. 
  8. Return to baking sheet. Bake for 5 minutes or until bread crumbs are lightly brown. 
  9. Let stand for 10 minutes before slicing and serving.

Duo Tater Bake

This hearty dish is a favorite among family and friends alike. With layers of creamy mashed potatoes and gooey cheese, it’s sure to become a new holiday tradition in your home!

Ingredients:

-4 lbs potatoes, peeled and cut into chunks

-8 oz cream cheese

-1 cup sour cream

-2 cups shredded cheddar cheese

-1/4 tsp salt

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Bring a large pot of salted water to a boil.
  3. Add potatoes and cook until tender, about 15 minutes.
  4. Drain well and transfer to a large bowl.
  5. Mash with cream cheese and sour cream until smooth.
  6. In a separate bowl, toss together cheddar cheese and salt.
  7. Transfer half of the potato mixture to a lightly greased 9×13-inch baking dish.
  8. Sprinkle with half of the cheddar cheese mixture, then top with the remaining potato mixture and remaining cheddar cheese.
  9. Bake for 20 to 25 minutes or until heated through and golden brown on top.
  10. Serve hot, garnished with chopped chives if desired.
